THREE BEAN VINDALOO CURRY

  • 1 x large onion chopped
  • 3 x cloves garlic chopped
  • 1 x tin chickpeas
  • 1 x cup green peas
  • 1 x tin kidney beans
  • 1 x jar tomato puree
  • Yoghurt to serve

 

Fry onion and garlic in ghee/oil of your choice

 Add 1 x tbsp. Love My Earth Vindaloo curry mix and fry until fragrant

 Add chickpeas, green peas and kidney beans

 Stir through tomato puree and simmer for 15 minutes

 

Serve with roti, naan or rice and yoghurt!
