Kale, the butt of so many jokes, symbolising the dietary quirks of the health obsessed and la de da, is in fact one of the healthiest and most nutritious plant foods in existence, loaded with all sorts of beneficial compounds… some of which have powerful medicinal properties. It is in season right now and at its nutritional optimum and doesn’t taste like bug spray…promise J

 This week’s recipe comes from Melissa Visco at Simple Living Vegan.

  • 2 handfuls kale (remove middle stem)
  • 1 frozen banana - frozen bananas make your smoothie extra creamy
  • 250ml coconut water
  • 1/2 lime or lemon (skin on if you've got a high powered blender)

 Place all ingredients in a blender, blend until smooth and enjoy.

Optional extras to pimp up your smoothie: 1 small handful of cashew nuts for added creaminess; 1 teaspoon green super food powder nutrient like spirulina.

 Kale Fun Fact for next dinner party: Eating Kale with good fats like nuts helps the body to absorb the maximum nutrients from this green wonder! (If you're allergic to nuts add a teaspoon of avocado, coconut oil or sunflower seeds instead).
